I was thinking about using the PS2 as a main processor for a controller board. (http://www.trossenrobotics.com/store/p/5341-InterfaceKit-8-8-8.aspx) I've never really compiled anything before and I want to know if I could easily compile an IOP driver.

Yes, it's easy to compile things, just use the toolchain.
But writing the code is going to be the hard part. If you haven't done it before then the PS2 is going to be difficult to start with.
